Although our Winemaker Evenings typically feature 4-5 wines; at this event we’ll be featuring 7 bottles from Tercero’s current line-up\, along with additional paired bites to suit! An evening fitting for the holidays\, not to mention Tercero wines are a great value which all of us Epicureans are searching for! \nLarry did not start out in the wine industry\, (like many of the great winemakers in our region); but after taking classes at community colleges with kids who literally could have been his kids\, he received his MS in Viticulture and Enology from UC Davis\, and then moved to the Santa Barbara County wine region in 2005. Starting on the winemaking team at Fess Parker Winery\, he eventually branched off to start and run Tercero wines. Larry is adept not only at winemaking but at explaining the process in a very user-friendly manner. By combining the classic styles of Old World wines\, and the artistic\, and often\, hands-off practices of the New World\, Kiranbay has created something beautiful and unique: Saint K Wines. After the harvest ended\, it didn’t take him long to pack up his belongings and follow his passion out west to make wine. Winemaker Chris Kiranbay is originally from Arlington\, VA and has a longstanding history in the wine industry. After 15 years in fine dining and wine brokerage\, a trip to Napa inspired a move across country to California where Chris worked a harvest in Paso Robles back in 2010; as his dream was to work with Rhône Valley varietals. He then began working for Herman Story Wines in 2013\, and subsequently began making some of his own wines; with inspiration from winemakers such as Russell From\, Vailia Esh at Desparada\, and Curt Schalaclin of Sans Liege. \nI’ve never done anything by the book. I grew up on three different continents and my first culinary training came from the best cook I knew… Mom. I bailed on public education and took my talents to prison food service\, where I once almost started a riot by adding curry powder to the pot pie. And after years of tasting\, pairing\, and generally kicking ass in DC-area restaurants\, I bolted. I set off for California to make my own. I pick stellar grapes at the perfect time and let them do their thing. In the end\, it’s about expressing myself\, about having a good time. The same spirit that inspired that dash of curry powder. Innovative? Yeah. Risky? Sure. Fun? Come find out. \n-Chris Kiranbay \nLike others who’ve worked under Russel From\, Cameron Stoffel made his first batch of wine in a storage closet in 2011 at Herman Story Wines. Since then\, he’s been producing micro-lots of high quality wine. No bottle of Ultima Tulie is sold without first touching his hands. Cameron grew up in an Italian influenced family. His great-grandparents emigrated to the US from a small island called Ischia\, and brought their food and wine culture with them. Cameron was about 7 years old when he tasted his first glass! “I was curious about this stuff they drank all the time. My grandfather said\, ‘Let the kid try it.’ So I did.” \nWith a background in graphic communications\, Cameron first explored Viticulture and Oenology in school\, and eventually interned at Herman Story Wines for a harvest; and soon after joined Russel From’s team. From there Russel gave him the opportunity to explore winemaking on his own in the adjacent building; and In 2011\, he established Ultima Tulie\, and made the conscious decision to make wine. \nTo Cameron\, Ultima Tulie represents a place beyond the borders of the known world. It was used during times of early exploration\, when very little was known about the world. The name captures Cameron’s love of exploring and going past any self-imposed limits\, living with purpose\, and getting off the beaten path\, and hopefully finishing a damn good bottle of wine while doing so. Several trips to the Cannes Film Festival led to his obsession with Rhone varietals. He was raised on a ranch in West Templeton in the Paso Robles Willow Creek District AVA. He and his family raised livestock and grew rotating crops on the 40 acre property which his parents purchased in the 70s. The family grew up with many pioneering grape farmers in the area\, including the Dusi and Smith families. Terry and Pebble Smith planted the James Berry Vineyard with their son Justin in the 80s. Adams became childhood friends with Justin and they remained close throughout their college years. When Smith was finishing up at Cal Poly\, Mark Adams was starting at Chico State. They stayed in touch and Smith exposed Adams to the earliest incarnations of homemade JBV red wines. As James Berry Vineyard grapes became more famous\, Adams was hip to their growth\, from the earliest Wild Horse JBV wines to Smith’s development as a vigneron. These experiences were the beginning of a life-long love affair with Rhône varietals and the Paso Robles wine growing region. \nAs a musician and cinema student in college\, Adams went on to write original music and edit sound for film and television\, ultimately landing at Sony Pictures Studios in Culver City\, California. He toured with several music groups and was consistently in restaurants and bars\, further exposing him to the world of wine. The film industry took him to the south of France\, where he was exposed to the wonderful wines of the Rhône on repeated visits to the Cannes Film Festival. Musical tours of Europe enlightened Adams to the fact that many Europeans made small batches of wine for personal consumption in their homes. Through all of this\, his heart was never far from Templeton\, and a seed was planted to grow wine grapes on the family property. He visited home regularly hoping to find an opportunity to return and farm the property again. That opportunity began to present itself in the early 2000’s when Saxum was taking flight. Adams was the first employee for Justin Smith at Saxum and soon after\, planted 4 acres of his own rooted Estrella Clone Syrah on the Adams Ranch. DESCRIPTION:Join us for an evening with Ryan Pease of Paix Sur Terre\nESB is delighted to showcase some of the most unique wines in all of the central coast produced by none other than Ryan Pease of Paix Sur Terre! Between the rare Ugni Blanc (commonly used in cognac) and the deep and exquisite selection of high quality Mourvèdre\, Ryan’s wines offer some of the best value in all of Paso and ESB has special access to his upcoming 2021’s and a few library specialties! \nPaix Sur Terre was the dream of Ryan and his wife\, Nicole with a vision for creating a portfolio of truly mineral-driven Mourvèdres along with small lots of Grenache and Syrah\, so they founded Paix Sur Terre in 2010.  The goal was to produce the wines they love\, single-vineyard Mourvèdre\, Rhône blends\, and Mediterranean-style white wines. With fruit sourced from some of the best vineyards in Paso Robles\, Paix Sur Terre has developed a reputation for truly creative wines that stand out from the crowd\, producing unique varietals not found anywhere else in Paso. Their wines are elegant\, well-balanced\, complex\, and true to their Paso Robles terroir. Ryan uses minimal oak\, lots of whole cluster\, and does everything possible to make site-specific wines.  Exhaustive\, single-vineyard sourcing allows Ryan to produce unusual varieties like Ugni Blanc along with his personal favorite\, Mourvèdre. Sourcing from nine stunning vineyards on the west side of Paso Robles\, some of the greatest sites in the area\, the fruit is always picked keeping freshness in mind to express a balance of mouthwatering\, savory\, and mineral qualities. For that reason\, all of his wines are nearly sold out! \nNow is your chance to meet Ryan\, a wonderful human being that started out with a finance degree and finished with a viticulture degree\, and learn about the journey he and Nicole have been on to bring such creative wines to the world.\nRyan Pease started out in the wine industry while attending college at Cal Poly\, San Luis Obispo. Looking for a part time job\, he came across a posting for tasting room help at Linne Calodo in Paso Robles. While on a break from school\, Ryan took a fated trip to France\, and it was there that he set his mind on making wine. One night\, he said\, “I was sitting on the banks of the Rhône River in the same spot Van Gogh painted ‘A Starry Night’ watching the fireworks of the Bastille Day celebration.” He was sipping from a bottle of Domaine Tempier\, and it was one of those moments you never forget. It all clicked for him\, then and there. Ryan went on to finish his shifting his focus to Wine and Viticulture. After a couple harvests working with  Paso Robles wineries like Linne Calodo and Epoch he decided to start Paix Sur Terre while serving as head winemaker at Grey Wolf Cellars. TOP specializes in hand crafted Rhone varietal wines from westside Paso Robles. \nStanley Barrios was born and raised in Los Angeles\, California. He was influenced by music\, art\, and food and could have easily entered into any of those occupations; until he discovered wine. His love for wine began with Napa Valley Cabernets\, but after being introduced to the Rhone varietals of Paso Robles\, he was a changed man. He admired the people\, culture and energy of Paso Robles\, and eventually the region became his primary focus in wine collecting. \nBy his mid-twenties\, Stanley had become a wine connoisseur and collector. While traveling\, he would seek the opportunity to speak with winemakers\, picking their brains on the winemaking process; how clone selections\, elevations\, soil types\, trellising systems\, and yields play a roll on a wines identity. The fascination of such complex nuances was intriguing to him. Realizing wine collecting was more than a hobby\, his love and respect for wine inspired him to make his own. \nAfter working in the cellar for Nick Elliott at Nicora Winery in Paso for a year\, Stanley put into practice the skills he garnered from his apprenticeship\, his travels\, as well as what he had learned himself as a connoisseur\, to craft the wines for TOP. In just a few short years\, Stanley has already made an impression on the Paso wine community\, with his 2014 vintage of wines all scoring above 92+ points from Jeb Dunnuck! Not bad for his first release! TOP wines are gaining tremendous popularity with nearly every bottle spoken for by his member list\, and at only 800 cases of his 2016 vintages produced\, enthusiast and collectors alike are taking note of his wines.   \n \nStanley also works closely with wife Elena Martinez. Elena was first introduced to wine while working in hospitality. While living in Oregon\, she developed an understanding and appreciation for the diversity and expressiveness of different wine regions. Stanley and Elena named the winery TOP because the spinning top symbolizes their life together and the goals they wish to achieve. It is a metaphor reminding them to keep their balance. This concept signifies the bumps in the road or challenges each of us encounters trying to achieve our aspirations. Pippig changes blends yearly in his wines\, hand sorts each wine and never makes the same wine twice. Many of his wines weigh in at over 15% alcohol\, but they do not present as highly alcoholic. These wines are sourced from some of the best vineyards in the Santa Barbara and Central Coast area.Most recently the 2015 “Bossman” earned Sanguis 97 pts from Jeb Dunnuck!  \nLatin for blood\, Sanguis was founded by the German-born Matthias Pippig. Pippig has previously worked as a wine importer for Marc DeGrazia Selections\, and Estate Wines\, winemaker at Grassini Family Vineyards\, as well as a stint at the famous Le Brea Bakery. Lagom wines are not on allocation or list limited\, rather a new label offering delightful Burgundy varietals to contrast the Rhones of Torrin. Epicurean Santa Barbara is grateful for the opportunity to host Scott in Santa Barbara to share his beautiful wines\, his winemaking journey and his creative artistic approach to winemaking with our members. \n\nWe are artists\, farmers\, chemists\, parents\, and friends.\n We are grateful. We are Scott and Viquel Hawley and our two boys Reece and Gage. \n We are family and together we are Torrin.\n\n“Come for the wine\, stay for the winemaker\, leave with a bottle!” \nScott and his wife Viquel founded Torrin together with a family centric philosophy that begins with the nurturing of their two boys\, Gage and Reece\, and carries over to the cultivation of their other children\, the vines in their vineyard. Their deep passion for wine making is self-evident and reflected through their love of family and the their wine. Scott has been creating highly regarded wines from some of Paso Robles most significant vineyards for over 16 years and when it comes to winemaking\, he believes “his role is to simply create an environment throughout the grape growing process where the fruit is given the greatest opportunity to perform to its potential”. \n \nMeaning “of the hills”\, Torrin Vineyard is aptly located in the hills of the Santa Lucias west of Paso Robles in an area commonly referred to as the Templeton Gap. Originally part of the Booker Vineyard\, planted by Eric Jensen and Justin Smith\, Torrin is landlocked between L’Aventure and Booker Vineyards. With ten acres planted on rugged hillsides of high lime calcareous shale and siliceous shale they are located in one of California’s wine growing sweet spots. \nScott and Viquel  have recently ventured from their Rhone Varietal roots to create an exciting companion brand in the wines of “Lagom.” These wines focus on the inherent grace and finesse of Pinot Noir and Chardonnay from select cool-climate vineyards in unique pockets of Santa Barbara and San Luis Obispo counties. \n\nLAGOM: “Just the right amount”… The archetypical Swedish proverb “Lagom ar bast”\, literally “The right amount is best”; also translated as “Enough is as good as a feast.”\n \nLagom is a perfect mantra for Pinot Noir and Chardonnay. These varietals produce some of the world’s most sought after wines and manage to do so with an uncanny simplicity. They are rarely blended with other varieties\, often expressions from a single site\, and seldom heavy handed in their production yet they are capable of remarkable depth\, complexity and impeccable balance. The finest examples are impressive without being overwhelming\, they embrace the notion that enough is indeed “just the right amount”. \nTwo wine labels means more varietals! \nScott will be pouring two library wines from Torrin and two current releases from Lagom! Toft Wines are all about the pursuit of flavor that starts with meticulous farming. With access to the premier vineyards spanning the Central Coast\, Toft wines honor the AVAs from which the grapes are cultivated. His small production allows him to focus his attention on fruit source and handcrafting his blends. Jacob has a calling to introduce regions to one another and that journey is fulfilled in his cellar; his focus is blended between the details. \nWhile studying under Stephan Asseo of L’Aventure for six years\, Jacob learned that wines of quality begin in the vineyard. Therefore\, he sources only the best fruit that the Central Coast offers. After making wine with Justin Smith (of Saxum) for five years and Stephan Asseo (of L’Aventure Wines) for two years\, the Jensens decided it was time to create their own expression with Booker Vineyard. The 2005 Vintage was Booker Vineyard’s first release with the wines being made by owner Eric Jensen. \n\nFrom Jeb Dunnuck\, of Wine Advocate:\n“While certainly the character of Paso’s winemaking motley crew\, Booker Vineyard’s Eric Jensen is dead serious when it comes to wine. Creating the estate in 2005 (they planted their vineyard in 2001)\, today he farms one of the greatest vineyards in the appellation and his wines consistently rank in the top two or three produced in a vintage. The only drawback here is the wines are made in tiny quantities and are moved almost exclusively through his mailing list.” \n“Created in 2005\, owner/winemaker Eric Jenson has pushed Booker Vineyard into the top 2-3 estates in the region…the wines…are some of the most impressive releases coming out of California.
