SUMMARY:Chef's Table with Justin Werner: A Night of Luxurious Bites
DESCRIPTION:Chef’s Table with Justin Werner: \nA Night of Luxurious Bites \nCast off your worldly cares and celebrate the earth’s abundant delicacies through a dinner unlike no other\, featuring Chef Justin Werner of Trust in Santa Ana\, CA. \nA this intimate 10-person chef’s kitchen table dinner\, Chef Justin will feature luxury ingredients such as lobster\, foie gras\, Kobe A5\, truffles\, white asparagus\, Blue Fin Tuna\, and decadent chocolate\, and also the inspiration and craft from his accomplished pedigree. And if you’ve attended any of his dinners before\, you know that Chef Justin’s charisma\, humor\, and clever culinary insight results in both an incredible dining experience\, and an entertaining one on all levels.  \nThe dinner will comprise of dishes imagined by Chef Justin from years of working in the best kitchens in the world. From his role as Sous Chef to Tom Colicchio for half a decade in NYC\, to his position at Thomas Keller’s Per Se\, an extended Internship at Noma\, and to maintaining two Michelin stars as a Sous Chef for Paul Liebrandt at Corton\, you’ll experience Michelin level cuisine with the presence of the chef at all times\, and execution and plating in full view. \nGuests will experience dishes and flavor combinations as unique as the ingredients themselves. You might be the only person to ever taste Santa Barbara Uni alongside Iberico Bellota at the same moment\, or components originally crafted by Thomas Keller and Joel Roubechon\, finished with a twist from Chef Justin’s own ingenuity. \nFour wine pairings will be provided for for the first several courses of the dinner.  For the main course\, we encourage guests to bring a bottle of their choice. Now is the time to pull out something special for this one-of-a-kind dinner!  \nLimited to 10 guests\, tickets are non-refundable. \nPrice is inclusive of food\, beverage\, tax and gratuity.   \nSo join us! And embrace a culinary soirée as we drop the curtain between front and back of house\, and offer our most magnificent dinner yet. Worldly (and seemingly heavenly) delights shall intertwine in decadent dishes; one after the other… \nOriginally from New York Justin cut his teeth in some of Manhattan’s top tier restaurants. He spent half a decade working at Craftfor Tom Colicchio where he gained a passion for quality produce and forging relationships with farmers. This lead him to spend a few years at Thomas Keller’s Per Se before moving on to Corton\, where he maintained two Michelin stars as a Sous Chef for Paul Liebrandt. After winning the hit TV show Chopped\, he used his winnings to invest in himself and left for Copenhagen. It was here that he interned at Noma while it held the title of “Best Restaurant In The World”. Upon returning to the US\, Justin made a cross country move to Orange County. After serving as chef at Playground DTSA\, (the only OC restaurant to make Jonathan Gold’s Top 101 Restaurants in Los Angeles list in 2017!)\, he eventually moved on to the executive chef position at Porch and Swing. A lover of travel\, Justin draws inspiration from his time spent around the world to create a very special dining experience for his guests. Justin Werner is now the Executive Chef of Trust in Santa Anna. Much like ESB’s Trust dinners\, the restaurant is an 18-seat culinary theater featuring an omakase-style tasting menu with beverage pairings with varying themes and menus based on Chef Justin’s culinary inspirations.

SUMMARY:Winemaker Evening: Mark Adams of Ledge
DESCRIPTION:Join us for an evening with Mark Adams of Ledge Vineyards\nMark makes exceptional and approachable Rhone wines while farming his own home vineyard on the west side of Paso. Musician turned winemaker\, he is taking critics and consumers by storm\, quickly blazing a trail to stardom. Beginning as Saxum’s first-ever employee\, he has become a rockstar winemaker and winegrower in his own right garnering the respect of the most respected Rhone varietal critics in the entire world. As Jeb Dunnuck puts it- “An upcoming estate I’ve been raving about for a few years now.” -recently receiving 98 & 99 points from Jeb! \nESB is super grateful and excited to share with you a special evening of delicious chef crafted appetizers and Ledge wines with the man himself! Meet Mark\, taste his fabulous wines and learn about his journey into winemaking. Come for the wine\, stay for the winemaker\, leave with a bottle\, two\, or a case! \nFeatured Wines\n2019 LEDGE MCA Cuvée  \n70% Syrah\, 25% Grenache\, 5% Roussane \nJeb Dunnuck 95 pts \n2020 LEDGE James Berry Vineyard \n 65% Grenache\, 29% Syrah\, 6% Roussane \nJeb Dunnuck 93 pts \n2019 LEDGE Adams Ranch Vineyard \n62% Syrah\, 34% Grenache\, 4% Roussane \nJeb Dunnuck 97 pts \n2020 LEDGE Bien Nacido Vineyard \n100% Syrah \n Jeb Dunnuck 98 pts \n2019 LEDGE Bien Nacido Vineyard \n100% Syrah \n Jeb Dunnuck 99 pts \nPassed Dishes\nSmoked Mushroom Risotto \nChanterelle\, Lobster Mushrooms\, Phyllo Cup \nSkirt Steak and Grilled Onion Flatbread \nMediterranean Salsa Verde\, Ricotta Salata\, Cilantro \nCarrot Tartare \nDashi Aioli\, Apricot mustard\, Fine Herbs \nButternut Squash Crostini \nWhipped Goat Cheese\, Crispy Sage \nMark is a musician and film editor turned wino who discovered his love for wine when traveling the world as a musician and film editor. Several trips to the Cannes Film Festival led to his obsession with Rhone varietals. He was raised on a ranch in West Templeton in the Paso Robles Willow Creek District AVA. He and his family raised livestock and grew rotating crops on the 40 acre property which his parents purchased in the 70s. The family grew up with many pioneering grape farmers in the area\, including the Dusi and Smith families. Terry and Pebble Smith planted the James Berry Vineyard with their son Justin in the 80s. Adams became childhood friends with Justin and they remained close throughout their college years. When Smith was finishing up at Cal Poly\, Mark Adams was starting at Chico State. They stayed in touch and Smith exposed Adams to the earliest incarnations of homemade JBV red wines. As James Berry Vineyard grapes became more famous\, Adams was hip to their growth\, from the earliest Wild Horse JBV wines to Smith’s development as a vigneron. These experiences were the beginning of a life-long love affair with Rhône varietals and the Paso Robles wine growing region. \nAs a musician and cinema student in college\, Adams went on to write original music and edit sound for film and television\, ultimately landing at Sony Pictures Studios in Culver City\, California. He toured with several music groups and was consistently in restaurants and bars\, further exposing him to the world of wine. The film industry took him to the south of France\, where he was exposed to the wonderful wines of the Rhône on repeated visits to the Cannes Film Festival. Musical tours of Europe enlightened Adams to the fact that many Europeans made small batches of wine for personal consumption in their homes. Through all of this\, his heart was never far from Templeton\, and a seed was planted to grow wine grapes on the family property. He visited home regularly hoping to find an opportunity to return and farm the property again. That opportunity began to present itself in the early 2000’s when Saxum was taking flight. Adams was the first employee for Justin Smith at Saxum and soon after\, planted 4 acres of his own rooted Estrella Clone Syrah on the Adams Ranch. These vines were all propagated from cuttings off the Bone Rock terraces at James Berry Vineyard. \n “Come for the wine\, stay for the winemaker\, leave with a bottle!”\nThe Winemaker evening takes place in a very special and unique Santa Barbara home with a view like no other. This modern home\, with its large arched glass walls\, features an unusual panoramic northern view looking across the bay; from Ventura in the east\, along the mountains past the 154 San Marcos pass\, to Gaviota in the west. Truly a sight!

Why no menu in advance? Because: #1.) we like to surprise our guests\, and #2.) we want to remove any pre-conceived notions regarding what the dishes will taste like\, or look like. This is part of the experience\, and part of the fun. \nWhat we can tell you is that the food will be fantastic. We are featuring only chefs who have inspired us\, who have shown great passion and remarkable skill and pedigree; chefs who have a distinctive culinary voice. Their biographies and the event description will provide sufficient details about the dinner; (for example: Mediterranean\, Modern\, or Vegetable-driven). The team at Epicurean Santa Barbara will know the menu in advance\, so we can notify the chef of dietary restrictions\, and answer any questions regarding the dinner. \nThis Trust dinner is BYOB. You heard us right! In the event reminder\, we will offer wine pairing suggestions for the dinner\, and you are welcome to bring whatever bottles (or spirits) you see fit! \nAs these are specialized menus\, modifications are politely declined. SUMMARY:Sangiovese in the Heart of Tuscany
DESCRIPTION:Sangiovese in the Heart of Tuscany\nJoin us for a side-by-side tasting of 8 stellar wines of Tuscany to Piedmont\, comparing the age\, style\, and varietal alongside a multi-course Tuscan inspired dinner. Epicurean Santa Barbara is exploring the regions of Northern Italy with a selection of 8 wines curated by our own longtime member Henry Chaney. \nIn 3 separate flights experience how Italy’s most popular red wine grape evolves in bottles sourced from two of its best known wine areas: Chianti Classico and Brunello di Montalcino. \nThe first flight will feature the young\, currently available vintages of 2015-2018; followed by flight two of similar wines from 2006-2007. In each of these there will be a Chianti Classico\, a Tuscan IGT and a Brunello from regions such as Fattoria di Felsina\, Marchesi Antinori\, Agricola Querciabella\, Talenti\, and Ciacci Piccolomina will be poured. \nThe final flight deviates from the all-Sangiovese theme by including the Nebbiolo grape from Barolo. Experience how two vintages from 1999-2001 enter their mature years.  Here we will compare a Brunello: 2001 Castelgiocondo Riserva with a Barolo 1999: Aldo Conterno Granbussia. \nThe dinner will he helmed by Chef Amy Baer Robinson\, with each flight accompanied by a course of delicious Italian cuisine. \n More information to come!

SUMMARY:Pair With Chef Rachel Wine Dinner!
DESCRIPTION:Pair With Chef Rachel Wine Dinner!\nChef Rachel Ponce specializes in creating exquisite dinners where the wine list is the source of inspiration for the dishes! \nIn this exciting 6-Course\, 6 bottle dinner\, experience wine pairings through Chef Rachel’s unique and provocative perspective… \nRather than featuring similar flavors or aromas found in the wine; which can detract from the wine and change its flavor profile\, she chooses to feature contrasting flavors to complement and elevate the beverage\, which causes the palate to crave another bite\, followed by another sip…following by another…well you get the idea. For chef\, Wine is a component that completes the flavor wheel making a dish whole! \nThis perspective results in\, say\, a Paso Robles Graciano paired with Wagyu Ribeye with Royal Sturgeon Caviar\, Squid Ink Breadcrumbs\, and Caramelized Onion; or perhaps a Roussane & Grenache Blanc Blend paired with Coconut Polenta\, Asparagus\, Pea Shoots\, and Guanciale. \n…Isn’t this the way we all want to experience our food and wine pairings? \nFor that reason\, ESB has presented Chef Rachel with fabulous highly regarded wines from around the world showcasing a variety of fruit\, climates and terroir from Italy\, France and California! \nJoin us for a unique approach to a wine dinner; unlike any ESB has hosted before! \nMenu\nSorelle Bronca Extra Dry Prosecco \nPair With Beef Carpaccio\nsalt cured egg yolk\, smoked caesar dressing\, local greens \n2019 Demougeot\, Pommard Rouge\, 1er Cru Charmots\, Coeur des Dames (Pinot Noir)\nPair With Duck Confit\nduchess Potato\, aged manchego\, garlic\, balsamic\n2016 Booker Vertigo (GSM)\nPair With Mushroom Napoleon \nguanciale\, grilled corn\, creamed corn\, parmigiana reggiano crisps\n2020 Lewis Cellars Napa Valley Reserve Chardonnay\nPair With Melon\ncompressed melon\, lemon coulis\, chilled mint and melon soup\, creme fraiche\n2020 Berteru Cannonau di Sardegna\nPair With Raviolo Escargot\nsquid ink\, ricotta\, brown butter\, escargot caviar\n2012 Clendenen Family Vineyards Late Harvest Viognier \nPair With Dessert \nthyme and blood orange cake\, miso brittle\, mascarpone yogurt mousse\nChef Rachel is Edible Magazine San Luis Obispo’s resident chef and recipe developer\, and head of the popular Edible Test Kitchen. She loves the traditions of the the old world\, and thrives on implementing contemporary techniques and creating full flavors and unique dishes that delight and enlighten her guests.  During her time in LA she was given the incredible opportunity to work with Wolfgang Puck and his culinary team for the 92nd Governor’s Ball and Oscars Red Carpet. During her time in LA\, she also spent time at Scratch Kitchen’s Leviathan\, and interned with Chef Justin Werner at Porch and Swing in Irvine\, who’s resume includes Noma while it held the title of “Best Restaurant In The World”\, Craft for Tom Colicchio\, Thomas Keller’s Per Se. Chef Amy is the Creative director for Epicurean Santa Barbara\, and provides dinners and chef services for many of the club’s events. \nThe Winemaker…\nPAOLO BARBIERI OF BARBIERI/KEMPE WINES \n \nBarbieri Wine Company was founded in 2005 by Master Sommelier Paolo Barbieri. Originally from Rome\, Paolo left Italy at age 22\, and after working in the restaurant industry\, later transitioned to sommelier – where he spent over thirty years managing numerous world class wine lists\, became a Master Sommelier\, and was exposed to the best wines in the world. \nPaolo’s exposure to the world’s wine inspired him to start making small (experimental) lots from Santa Barbara County in his garage in Las Vegas\, Nevada in 2003. The small wine press used in his initial batches can still be found in his tasting room today.  Paolo always loved the central coast for its wines\, and soon began crafting them in Buellton\, CA\, while commuting back to Las Vegas. In 2014\, Paolo and Erin decided “roll the dice” and go “all in” to pursue wine making full-time\, and left Las Vegas to open their tasting room in Los Olivos. Today\, Barbieri & Kempe wines have expanded to offer unique white and rose’ options as well as different varietals and blends. \nPaolo launched the Barbieri label in 2005.  He wanted his label to focus on Rhone Varietals\, so he began producing small lots of Syrah from Colson Canyon Vineyard in the Santa Maria Valley near Los Padres Nation Forest. In the following years\, Paolo added two new Syrah’s from Reeves Ranch and Three Creek Vineyard\, known today as Crown Point near the town of Los Olivos. Over the next 10 years\, Paolo and his wife Erin began expanding the brand by adding new Rhone varietals and red blends.

Keith Robinson\, Jeremy Allen and Bill Gibbs have raided their personal cellars and come up with 11 different G2 wines using different varietals across various vintages made by winemakers at the pinnacle of Paso and those winemakers eager to reach that mark. \nThe tasting will be broken down into 3 tasting segments along with a bounty of appetizers\, cheese\, charcuterie and bites: \nReception: Ledge G2 Grenache Blanc\n1) A curated tasting of 4 fantastic G2 wines by outstanding winemakers\n2) A 3-year vertical of Turtle Rock G2 w/special guest winemaker Don Burns\n3) A unicorn side by side of Saxum\, Andremily and the 100-point Turtle Rock\nGreat fruit plus a great winemaker produces a great wine…Average fruit plus a great winemaker can only produce average wine. The moral of the story is that\, even in the age of the celebrity winemaker\, the source of the grapes\, i.e. the vineyard\, is critical. A select few winemakers own their own estates and farm their own fruit. But the vast majority need to buy their fruit from land-owning farmers. Even those with their own estates supplement their fruit supply from the independent grape growers. In Napa\, the Beckstoffer To-Kalon vineyard is legendary. In Santa Barbara County\, the Bien Nacido vineyard is widely regarded as the best (and back in 2019\, 25 ESB members were lucky enough to have a personal tour and tasting of that vineyard!). In Paso Robles\, undoubtedly\, the top vineyard is the G2 Vineyard\, 88 acres of prime West Side Paso. G2 is owned and farmed by Bill Gibbs pursuing a second career after he built a software company in the first. He is both a genial guy and a genius. Why is it called G2? Well it’s complicated; the “G” is for Gibbs and it’s his second vineyard. (The fruit from his first vineyard goes exclusively to Justin Smith at Saxum!) In 2019 two G2 wines scored 100 points and a 3rd wine also got that highest rating and it comprised almost half G2 fruit. G2 is fast becoming a legend!

SUMMARY:ESB "TRUST" Dinner: Chef Justin Werner 2022
DESCRIPTION:ESB “TRUST” Dinner: Chef Justin Werner\n\nWe are excited to announce the return of ESB’s First TRUST Dinner guest chef\, Chef Justin Werner\, now the Executive Chef at TRUST in Santa Ana\, CA. \nOriginally from New York Justin cut his teeth in some of Manhattan’s top tier restaurants. He spent half a decade working at Craft for Tom Colicchio where he gained a passion for quality produce and forging relationships with farmers. \nJustin Werner is now the Executive Chef of Trust in Santa Anna. Much like ESB’s Trust dinners\, the restaurant is an 18-seat culinary theater featuring an omakase-style tasting menu with beverage pairings with varying themes and menus based on Chef Justin’s culinary inspirations. \nThe Cuisine….\nThis experience will be a multi-course dinner\, with shared plates featuring Chef Justin’s diverse cuisine with classic\, modern and international influences. Expect to see a variety of fresh locally sourced produce\, as well seafood\, pasta\, and red meat\, and inventive textures and generous use of spices\, sauces and rich\, but balanced flavors. His cuisine is both creative and approachable\, and always satisfying. \nCharismatic as he is talented\, Chef Justin is a witty personality whose sense of humor and insight into the culinary world will make this experience not only delicious\, but also very entertaining! \nWhat is a “Trust” Dinner?\nA trust dinner is an upscale multi-course meal (5+ Courses)\, where guests put their trust into the Chef\, who will be preparing a one of a kind dinner revealed upon arrival! \nThe first Trust dinner is BYOB. You heard us right! In the event reminder\, we will offer wine pairing suggestions for the dinner\, and you are welcome to bring whatever bottles (or spirits) you see fit! \nAs these are specialized menus\, modifications are politely declined. But please include any serious food allergies in your registration notes. \n\nThis event will be held outdoors at a private residence.\n \n\n

SUMMARY:Winemaker Evening: Ryan Pease of Paix Sur Terre
DESCRIPTION:Join us for an evening with Ryan Pease of Paix Sur Terre\nESB is delighted to showcase some of the most unique wines in all of the central coast produced by none other than Ryan Pease of Paix Sur Terre! Between the rare Ugni Blanc (commonly used in cognac) and the deep and exquisite selection of high quality Mourvèdre\, Ryan’s wines offer some of the best value in all of Paso and ESB has special access to his upcoming 2021’s and a few library specialties! \nPaix Sur Terre was the dream of Ryan and his wife\, Nicole with a vision for creating a portfolio of truly mineral-driven Mourvèdres along with small lots of Grenache and Syrah\, so they founded Paix Sur Terre in 2010.  The goal was to produce the wines they love\, single-vineyard Mourvèdre\, Rhône blends\, and Mediterranean-style white wines. With fruit sourced from some of the best vineyards in Paso Robles\, Paix Sur Terre has developed a reputation for truly creative wines that stand out from the crowd\, producing unique varietals not found anywhere else in Paso. Their wines are elegant\, well-balanced\, complex\, and true to their Paso Robles terroir. Ryan uses minimal oak\, lots of whole cluster\, and does everything possible to make site-specific wines.  Exhaustive\, single-vineyard sourcing allows Ryan to produce unusual varieties like Ugni Blanc along with his personal favorite\, Mourvèdre. Sourcing from nine stunning vineyards on the west side of Paso Robles\, some of the greatest sites in the area\, the fruit is always picked keeping freshness in mind to express a balance of mouthwatering\, savory\, and mineral qualities. For that reason\, all of his wines are nearly sold out! \nNow is your chance to meet Ryan\, a wonderful human being that started out with a finance degree and finished with a viticulture degree\, and learn about the journey he and Nicole have been on to bring such creative wines to the world.\nRyan Pease started out in the wine industry while attending college at Cal Poly\, San Luis Obispo. Looking for a part time job\, he came across a posting for tasting room help at Linne Calodo in Paso Robles. While on a break from school\, Ryan took a fated trip to France\, and it was there that he set his mind on making wine. One night\, he said\, “I was sitting on the banks of the Rhône River in the same spot Van Gogh painted ‘A Starry Night’ watching the fireworks of the Bastille Day celebration.” He was sipping from a bottle of Domaine Tempier\, and it was one of those moments you never forget. It all clicked for him\, then and there. Ryan went on to finish his shifting his focus to Wine and Viticulture. After a couple harvests working with  Paso Robles wineries like Linne Calodo and Epoch he decided to start Paix Sur Terre while serving as head winemaker at Grey Wolf Cellars. After revitalizing Grey Wolf’s wine program\, he accepted the winemaking role at Brecon Estate before leaving to focus 100% on Paix Sur Terre\, as he does now. \nFeatured Wines\n2021 Ugni Blanc\n2021 Days Between\n100% Counoise\n2020 Been Away Too Long\n100% Mourvedre\, Denner Vineyard\n2015 Song’s if it’s Own ~ Library Wine ~\n58% Mourvedre\, 22% Grenache\, 17% Syrah\, 3% Cinsault\nWines will be available for purchase.\n\nMenu\nGingered Shrimp Salad\nCaesar Salad Toasts\nChermoula Lamb with Preserved Lemon Labneh\nBroccoli Pesto Tostada with Ricotta Salata\n “Come for the wine\, stay for the winemaker\, leave with a bottle!”\n \nThe Winemaker evening takes place in a very special and unique Santa Barbara home with a view like no other. This modern home\, with its large arched glass walls\, features an unusual panoramic northern view looking across the bay; from Ventura in the east\, along the mountains past the 154 San Marcos pass\, to Gaviota in the west. Truly a sight! \nIMPORTANT NOTE: This event is being held in an incredibly special private home. In order for this to take place\, the host kindly requires all attendees be vaccinated.
